A substance that contaminates foods cooked at high temperatures, acrylamide, has been shown to cause cancer in animals, warns a report prepared by a committee of international experts and released by a Joint Expert Committee of the UN Food and Agriculture Organization (FAO) and the World Health Organization (WHO) on Friday. The report calls for continued efforts to reduce acrylamide in food.
The neurotoxicity of acrylamide in humans is known from instances of high occupational and accidental exposure when acrylamide is used in industrial processes in the production of plastics and materials. Studies in animals have also shown that acrylamide causes reproductive problems and cancer.

Kamut® grass (Triticum durum) is an ancient variety of nutritional grains that contains more protein, lipids, and minerals than common wheat or other cereal grasses. A non-hybrid, heirloom wheat grass was first used medicinally by the Egyptians. There is a vast difference between Kamut flour, which is made from the grain of Kamut, and Kamut grass juice, which is obtained by juicing the green grass. Kamut flour is about 1/6 the cost of Kamut grass juice and contains only a fraction of the nutrition found in the grass juice. Kamut grass helps to regulate pH balance as it has the highest pH of all green foods. It is rich in metabolic enzymes, contains high levels of trace minerals, and is a good source of magnesium, zinc, vitamins B1, B2, B3 and E.
